Smoking meat & fish: Would using a BBQ inside a smokehouse work?
If I built a small fire with wood in my BBQ which is metal with a lid & a vent on top to let smoke out and it was inside a smallish, sealed ‘smokehouse’ with the (pr-cured) fish & meat hanging above, would is smoke them effectively?
Obviously it would need constant attention to keep the fire burning, I thought I’d use a base of usual charcoal topped up with dampish tree branches all cut up….or am I way of the mark?
How much meat and fish do you plan to smoke at once? If not too much, there are commercially made smoke boxes. They are steel boxes maybe 3 feet high and wide with a tray at the bottom for the wood. I have seen this at Walmart and in sporting goods stores. It looked like there would be room for a good number of items with plenty of room for the smoke to circulate around in there. I think this smaller method may be safer than a larger smoke house, it would be easier to keep at the optimal temperature for curing meat. And would require less charcoal and wood.
