What is your best recipe for flavoured butter?
I love mixing things into butter and then melting it over fish or meat or in jacket potatoes, the best one I have made was butter, basil, parmesan cheese, roasted garlic with a touch of olive oil, blend those altogether with some seasoning and use as desired, try it, it’s delicious

How to make brandy butter:
A hard sauce flavoured with brandy. This is the traditional accompaniment to Christmas pudding.
Ingredients
1/2 cup butter
just over 1/4 cup confectioners’ sugar
1 tablespoon brandy
(see measure conversions for more information)
Method
- Cream butter and sugar together.
- Stir in the brandy and beat into the butter and sugar mix.
- Put into an attractive dish and keep in the refrigerator until needed.
- When serving the Christmas pudding, add a good tablespoon of the brandy butter for real seasonal indulgence!
Mustard Lemon Butter
Ingredients
150 g butter
juice of 1/2 lemon
1 tsp mustard
3/4 tsp paprika
Method
1. Lightly whisk the butter at room temperature.
2. Add the mustard and paprika and whisk. Add the lemon juice and lightly whisk until mixed evenly.
3. Put it on a sheet of aluminium foil or baking paper in a cylinder shape. Roll and twist ends. Refrigerate. Use as normal butter.
Garlic and Parsley Butter
Ingredients
100g butter
1 tsp garlic paste
1 1/2 tsp finely chopped fresh parsley
1/2 tsp black pepper
Method
1. Lightly whisk the butter at room temperature.
2. Add the remaining ingredients and mix evenly.
3. Put it on a sheet of aluminium foil or baking paper in a cylinder shape. Roll and twist ends. Refrigerate. Use as normal butter. This spread is also good for making garlic bread.
Onion Seeds and Fennel Butter
Ingredients
100g butter
1 tsp onion seeds
1 tsp fennel seeds (saunf) powder
1/2 tsp black pepper, coarsely ground
Method
1. Lightly whisk the butter at room temperature.
2. Add the remaining ingredients and mix evenly.
3. Put it on a sheet of aluminium foil or baking paper in a cylinder shape. Roll and twist ends. Refrigerate. Use as normal butter.
Pickled Onion and Gherkin Butter
Ingredients
100g butter
3-4 pickled onions, finely chopped
1 small gherkin, finely chopped
1/2 tsp black pepper, coarsely ground
Method
1. Lightly whisk the butter at room temperature.
2. Squeeze out the excess liquid from the onions and gherkin. Add to the butter along with black pepper and mix evenly.
3. Put it on a sheet of aluminium foil or baking paper in a cylinder shape. Roll and twist ends. Refrigerate. Use as normal butter.
Other butter variations:
5. Green Chilli and Coriander Butter – Add chopped green chillis and corainder to taste to the softened butter
6. Lemon Butter – Add lemon juice and grated lemon zest to taste to the softened butter.
7. Orange Butter – Add orange juice and grated orange zest to taste to the softened butter.
